Bittman's Banana Muffins

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • 2 1/2 cups whole wheat flour, preferably pastry flour
  • 3/4 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, melted
  • 1 cup banana, mashed, about 2 medium large
  • 1 egg, beaten
  • 1/2 cup buttermilk

Recipe

  • 1 preheat oven to 375°. prepare 12 cup muffin tin with non-stick spray or paper liners.
  • 2 in a large bowl, mix together the flour, sugar, baking powder, baking soda and salt.
  • 3 in another bowl, whisk together the melted butter, banana, egg and buttermilk.
  • 4 fold wet into dry and stir until just combined.
  • 5 fill muffin cups and bake for 25 to 30 minutes or until puffed and golden brown. serve warm.
