Creamy Tofu Pasta

Ingredients
- Servings: 4
- 2 tablespoons extra virgin olive oil
- 4 cloves garlic, chopped fine
- 1/4 cup finely chopped red onion
- 1 (32 ounce) package soft tofu
- 1/2 cup water
- 3 1/2 tablespoons tamari or 3 1/2 tablespoons light soy sauce
- 1 1/2 teaspoons dried sweet basil leaves
- 2 cups hot cooked pasta
- 1/4 cup chopped fresh parsley
Recipe
- 1 heat the olive oil in a small pan.
- 2 add garlic and onion and saute over medium-low heat until the onion is translucent.
- 3 in food processor, blend the tofu until it reaches a uniform consistency.
- 4 pour the blended tofu into saute pan with the garlic and onion, and cook for 5 minutes over medium heat.
- 5 add water, tamari, and basil to the pan and cook for 5 minutes more.
- 6 pour the tofu sauce over cooked pasta.
- 7 toss well and sprinkle with parsley.
- 8 serve immediately.
