Creamy Tofu Pasta

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 tablespoons extra virgin olive oil
  • 4 cloves garlic, chopped fine
  • 1/4 cup finely chopped red onion
  • 1 (32 ounce) package soft tofu
  • 1/2 cup water
  • 3 1/2 tablespoons tamari or 3 1/2 tablespoons light soy sauce
  • 1 1/2 teaspoons dried sweet basil leaves
  • 2 cups hot cooked pasta
  • 1/4 cup chopped fresh parsley

Recipe

  • 1 heat the olive oil in a small pan.
  • 2 add garlic and onion and saute over medium-low heat until the onion is translucent.
  • 3 in food processor, blend the tofu until it reaches a uniform consistency.
  • 4 pour the blended tofu into saute pan with the garlic and onion, and cook for 5 minutes over medium heat.
  • 5 add water, tamari, and basil to the pan and cook for 5 minutes more.
  • 6 pour the tofu sauce over cooked pasta.
  • 7 toss well and sprinkle with parsley.
  • 8 serve immediately.
