Creamy Stovetop Mac-n-cheese

Ingredients

  • Servings: 12
  • 1 lb macaroni
  • 2 eggs
  • 2 egg yolks
  • 12 ounces evaporated milk (1 can)
  • 1 teaspoon salt (kosher is best)
  • 1/2 teaspoon pepper
  • 1 teaspoon dry mustard
  • 1 teaspoon hot sauce
  • 12 ounces sharp cheddar cheese
  • 4 teaspoons flour

Recipe

  • 1 in a large pot of boiling, salted water cook the pasta to al dente and drain.
  • 2 whisk together the eggs, egg yolks, milk, hot sauce, salt, pepper, and mustard. stir into the pasta and add the cheese. over low heat continue to stir for 3 minutes or until creamy.
