Chili Cheddar Penne

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 1 1/3 cups uncooked penne pasta
  • 4 teaspoons butter
  • 1 cup milk
  • 2 cups cheddar cheese, shredded
  • 4 teaspoons taco seasoning
  • 1/4 teaspoon salt
  • 2/3 cup frozen corn, thawed
  • 2/3 cup tomato, chopped
  • 1 (4 ounce) can chopped green chilies, drained

Recipe

  • 1 cook pasta according to package directions.
  • 2 meanwhile, in a large saucepan, melt butter over medium heat.
  • 3 stir in flour until smooth; gradually add milk.
  • 4 bring to a boil; cook and stir for 2 minute or until thickened.
  • 5 reduce heat to medium.
  • 6 stir in the cheese, taco seasoning and salt.
  • 7 cook and stir for 2-3 minute or until cheese is melted.
  • 8 drain pasta; stir into cheese sauce.
  • 9 cook and stir for 3 minutes or until heated through.
  • 10 stir in corn, tomatoes and chilies just until combined.
