Carolina Hopping John - Hoppin' John

Total Time: 3 hrs 10 mins Preparation Time: 10 mins Cook Time: 3 hrs

Ingredients

  • Servings: 8
  • 2 cups dried cow peas or 2 cups dried black-eyed peas
  • 1/4 lb salt lamb
  • 2 cups cooked rice
  • 2 tablespoons butter
  • salt and pepper, to taste

Recipe

  • 1 soak peas overnight.
  • 2 cook with salt lamb until peas are tender, being careful to keep them whole.
  • 3 when done, there should only be a small quantity of liquid left in the pot.
  • 4 add cooked rice, season with salt, pepper and butter; cover and simmer an additional 15 minutes.
  • 5 serve with bread and butter.
