Brown Rice With Chiles For Two

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 2
  • 1/2 cup uncooked brown rice
  • 1 cup plain low-fat yogurt
  • 1/4 teaspoon salt
  • 1/8 teaspoon fresh ground black pepper
  • 2 ounces green chilies, drained and chopped
  • 1/4 cup shredded reduced-fat monterey jack cheese or 1/4 cup colby blend cheese

Recipe

  • 1 cook brown rice according to package directions.
  • 2 while rice is cooking, preheat oven to 350 degrees.
  • 3 prepare a 1 1/2 quart casserole with cooking spray.
  • 4 in a large bowl, combine cooked rice with yogurt, salt and pepper; mix well.
  • 5 place half of the mixture in the bottom of casserole.
  • 6 top with half the chiles and half the cheese.
