Brown Rice With Chiles For Two

Ingredients

- 1/2 cup uncooked brown rice
- 1 cup plain low-fat yogurt
- 1/4 teaspoon salt
- 1/8 teaspoon fresh ground black pepper
- 2 ounces green chilies, drained and chopped
- 1/4 cup shredded reduced-fat monterey jack cheese or 1/4 cup colby blend cheese
Recipe
- 1 cook brown rice according to package directions.
- 2 while rice is cooking, preheat oven to 350 degrees.
- 3 prepare a 1 1/2 quart casserole with cooking spray.
- 4 in a large bowl, combine cooked rice with yogurt, salt and pepper; mix well.
- 5 place half of the mixture in the bottom of casserole.
- 6 top with half the chiles and half the cheese.
- 7 repeat layers, topping with remaining cheese.
- 8 bake uncovered about 25 to 30 minutes or until the top is lightly browned.
