Chili Cheese Rice

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 1 cup chopped onion
  • 1/4 cup butter, melted
  • 4 cups cooked rice
  • 1 (16 ounce) container sour cream
  • 1 cup ricotta cheese
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 (4 1/2 ounce) cans chopped green chilies
  • 2 cups shredded cheddar cheese or 2 cups monterey jack cheese

Recipe

  • 1 preheat oven to 325º.
  • 2 lightly grease a 2 quart casserole.
  • 3 in a large saucepan, saute onion in butter.
  • 4 remove from heat and stir in rice, sour cream, ricotta, salt, pepper, and chilies.
  • 5 spoon half of rice mixture into casserole.
  • 6 top with half of cheese.
  • 7 top with remaining rice mixture.
  • 8 bake uncovered for 20 minutes; sprinkle with remaining cheese and bake 5 minutes or until cheese is melted.
