Chili Cheese Rice

Ingredients
- Servings: 6
- 1 cup chopped onion
- 1/4 cup butter, melted
- 4 cups cooked rice
- 1 (16 ounce) container sour cream
- 1 cup ricotta cheese
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 (4 1/2 ounce) cans chopped green chilies
- 2 cups shredded cheddar cheese or 2 cups monterey jack cheese
Recipe
- 1 preheat oven to 325º.
- 2 lightly grease a 2 quart casserole.
- 3 in a large saucepan, saute onion in butter.
- 4 remove from heat and stir in rice, sour cream, ricotta, salt, pepper, and chilies.
- 5 spoon half of rice mixture into casserole.
- 6 top with half of cheese.
- 7 top with remaining rice mixture.
- 8 bake uncovered for 20 minutes; sprinkle with remaining cheese and bake 5 minutes or until cheese is melted.
