Baked Spicy Rice

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 1 cup long-grain rice, uncooked
  • 2 (10 ounce) cans diced tomatoes and green chilies, undrained
  • 1 cup water
  • 1 teaspoon salt
  • 2/3 cup pimento stuffed olive, sliced
  • 1/4 cup vegetable oil
  • 1/2 cup chopped onion
  • 1 cup shredded monterey jack cheese (4 oz)

Recipe

  • 1 combine all ingredients in a shallow greased 2-quart baking dish.
  • 2 cover and bake at 350 for 45 minutes.
  • 3 stir well, and bake, uncovered, 15 additional minutes or until liquid is absorbed and rice is tender.
