Baked Spicy Rice

Ingredients
- Servings: 6
- 1 cup long-grain rice, uncooked
- 2 (10 ounce) cans diced tomatoes and green chilies, undrained
- 1 cup water
- 1 teaspoon salt
- 2/3 cup pimento stuffed olive, sliced
- 1/4 cup vegetable oil
- 1/2 cup chopped onion
- 1 cup shredded monterey jack cheese (4 oz)
Recipe
- 1 combine all ingredients in a shallow greased 2-quart baking dish.
- 2 cover and bake at 350 for 45 minutes.
- 3 stir well, and bake, uncovered, 15 additional minutes or until liquid is absorbed and rice is tender.
