Barley Florentine

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 3 cups vegetable stock
  • 1 cup barley
  • 1 teaspoon basil
  • 1/2 teaspoon onion powder
  • 1 cup fresh spinach, chopped
  • 2 teaspoons fresh lemon juice
  • 1 dash nutmeg

Recipe

  • 1 boil the first 4 ingredients together until the barley is tender.
  • 2 stir in the remaining ingredients and cook for 5 minutes longer.
  • 3 serve with some crusty french bread.
