Chicken Feta Pasta Salad

Total Time: 30 mins Preparation Time: 30 mins

Ingredients

  • Servings: 6
  • 1 lb gemelli pasta or 1 lb other firm pasta
  • 4 tablespoons olive oil
  • 4 tablespoons balsamic vinegar
  • 4 ounces feta cheese
  • 1/4 cup yellow pepper, in rings
  • 2 cups cooked chicken, and cubed
  • 1/4 cup red onion
  • 1/2 cup cherry tomatoes
  • 1/2 cup fresh basil, loosely packed
  • 3 tablespoons pine nuts, toasted
  • 1/4 cup cooked bacon, diced
  • salt
  • pepper

Recipe

  • 1 cook pasta according to package directions.
  • 2 dice and chop ingredients to the size you prefer.
  • 3 mix all together in a large bowl and refrigerate at least 1/2 hour.
