Couscous And Cucumber Salad With Buttermilk- Dill Dressing

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 6
  • 1 1/4 cups water
  • 1 cup uncooked couscous (i used whole wheat)
  • 1/2 cup low-fat buttermilk
  • 1/4 cup plain low-fat yogurt
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons vinegar
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chopped red bell pepper
  • 1/4 cup thinly sliced green onion
  • 2 cucumbers, peeled, quartered lengthwise, and sliced (about 3/4 pound)

Recipe

  • 1 in a medium saucepan, bring water to a boil and gradually stir in couscous.
  • 2 remove from heat, cover and let stand 5 minutes; fluff with a fork, cool.
  • 3 combine buttermilk, and next 6 ingredients in a large bowl; stir well with a whisk.
