Chicken & Rice Salad

Ingredients

  • Servings: 2
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1/2 tablespoon lemon juice
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4-1/2 onion, finely chopped
  • 1 roma tomato, diced
  • 1 cup cooked skinless chicken breast, diced
  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 1 -1 1/2 cup cooked rice, cooled

Recipe

  • 1 mix the ingredients for the dressing together in a small bowl, set aside.
  • 2 place the salad ingredients in a medium glass bowl. pour the dressing over top then stir until well blended.
  • 3 serve cooled or at room temperature.
