Chase's Favorite Taco Soup

Ingredients

- 32 ounces tomato juice
- 6 -8 cups water
- 2 (2 1/2 ounce) packages taco seasoning
- 1 1/2 cups rice
- 2 lbs lean ground beef
- 2 (15 ounce) cans kidney beans
- 2 (15 ounce) cans refried beans
- 2 (15 ounce) cans pinto beans
- 1 scoop tortilla chips
- shredded cheese
Recipe
- 1 in large pan combine tomato juice, half the water, taco seasoning & rice. bring to a boil, then simmer until rice is cooked through.
- 2 meanwile brown ground beef in a skillet, drain and set aside. (i run mine through the food processor to make it less chunky, my kids eat it better this way!).
- 3 slowly stir in the refried beans. (it's easier to mix them in first). next combine the remaining ingredients. bring to a boil and simmer for about 5 minutes. just long enough to combine the flavors.
- 4 serve in bowls, sprinkle generously with cheese. serve with chips.
