Chase's Favorite Taco Soup

Total Time: 40 mins Preparation Time: 5 mins Cook Time: 35 mins

Ingredients

  • Servings: 6
  • 32 ounces tomato juice
  • 6 -8 cups water
  • 2 (2 1/2 ounce) packages taco seasoning
  • 1 1/2 cups rice
  • 2 lbs lean ground beef
  • 2 (15 ounce) cans kidney beans
  • 2 (15 ounce) cans refried beans
  • 2 (15 ounce) cans pinto beans
  • 1 scoop tortilla chips
  • shredded cheese

Recipe

  • 1 in large pan combine tomato juice, half the water, taco seasoning & rice. bring to a boil, then simmer until rice is cooked through.
  • 2 meanwile brown ground beef in a skillet, drain and set aside. (i run mine through the food processor to make it less chunky, my kids eat it better this way!).
  • 3 slowly stir in the refried beans. (it's easier to mix them in first). next combine the remaining ingredients. bring to a boil and simmer for about 5 minutes. just long enough to combine the flavors.
  • 4 serve in bowls, sprinkle generously with cheese. serve with chips.
