Bree's Vegan Mexican Rice And Veggies

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 (16 ounce) cans tomato sauce
  • 3 cups rice (i prefer jasmine rice)
  • 1/2 cup cumin
  • 4 cups of choice mixed vegetables
  • 2 tablespoons margarine
  • 1 cup water

Recipe

  • 1 in a frying pan melt margarine.
  • 2 add rice and stir over high heat until rice is browned.
  • 3 once rice has browned add water and bring to boil.
  • 4 reduce heat to medium high and let rice absorb most of the water.
  • 5 add tomato sauce and cumin.
  • 6 cook until rice is tender.
  • 7 add veggies and cook until completely heated through.
