Breakfast In A Cup

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • Servings: 12
  • 3 cups cooked rice
  • 4 ounces shredded cheddar cheese, divided
  • 1 (4 ounce) can diced green chilies, drained
  • 1 (2 ounce) jar diced pimentos, drained
  • 1/3 cup milk
  • 2 eggs, beaten
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • nonstick cooking spray

Recipe

  • 1 preheat the oven to 400°.
  • 2 combine rice, ½ cup cheese, chilies, pimentos, milk, eggs, cumin, salt and pepper in a large bowl.
  • 3 divide mixture evenly into 12 muffin cups coated with nonstick cooking spray.
  • 4 sprinkle with remaining ½ cup cheese.
  • 5 bake at 400°f for 15 minutes or until set.
