Creamy Pancetta Rice

Ingredients
- Servings: 8
- 1/2 lb trimmed pancetta, diced 
- 1 large red onion, chopped 
- 1 3/4 cups half-and-half 
- 3 cups cooked rice 
- 1 1/2 cups dried sweetened cranberries 
- 1 cup chopped pistachio nut 
- 1/2 teaspoon salt 
- 1/4 teaspoon black pepper 
Recipe
- 1 brown pancetta and onions in large skillet over medium heat, cook until onions begin to brown (about 8 minutes). 
- 2 add half-and-half; bring to a boil. 
- 3 remove from heat. 
- 4 add rice, cranberries, pistachios, salt and pepper.
