Almost Fat Free, Sugar Free Cornbread

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • 1 cup self-rising cornmeal
  • 1/2 cup all-purpose flour
  • 3/4 cup skim milk
  • 1 egg
  • 2 tablespoons unsweetened applesauce
  • 1 1/2 teaspoons baking powder
  • 1 tablespoon sugar substitute

Recipe

  • 1 in a medium-sized bowl, mix all ingredients together. batter may have a few lumps left.
  • 2 spray a cast iron pan with cooking oil and blot with paper towel so it is smeared well all over.
  • 3 bake at 400 for 15-20 minutes, or until lightly browned on top.
