Almost Fat Free, Sugar Free Cornbread

Ingredients
- 1 cup self-rising cornmeal
- 1/2 cup all-purpose flour
- 3/4 cup skim milk
- 1 egg
- 2 tablespoons unsweetened applesauce
- 1 1/2 teaspoons baking powder
- 1 tablespoon sugar substitute
Recipe
- 1 in a medium-sized bowl, mix all ingredients together. batter may have a few lumps left.
- 2 spray a cast iron pan with cooking oil and blot with paper towel so it is smeared well all over.
- 3 bake at 400 for 15-20 minutes, or until lightly browned on top.
