Chicken Mushroom Fettuccine

Ingredients
- 200 g high fiber pasta
- 1 teaspoon olive oil
- 400 g chicken breasts, cut into strips
- 2 onions
- 2 garlic cloves
- 1 cup mushroom, sliced
- 400 g light evaporated milk
- 2 teaspoons parsley
- 1/2 teaspoon pepper
- 1 teaspoon salt
- 1 cup peas
Recipe
- 1 cook pasta according to directions.
- 2 heat oil in skillet.
- 3 onions for 2-3 minutes.
- 4 add chicken, garlic, and mushrooms. saute until chicken is cooked almost through, about 5-6 minutes.
- 5 add evaporated milk, pepper, salt, peas and parsley. bring to a boil. reduce heat and simmer for an additional 5 minutes.
- 6 add pasta, stir to coat, and serve.
