Chicken Mushroom Fettuccine

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 200 g high fiber pasta
  • 1 teaspoon olive oil
  • 400 g chicken breasts, cut into strips
  • 2 onions
  • 2 garlic cloves
  • 1 cup mushroom, sliced
  • 400 g light evaporated milk
  • 2 teaspoons parsley
  • 1/2 teaspoon pepper
  • 1 teaspoon salt
  • 1 cup peas

Recipe

  • 1 cook pasta according to directions.
  • 2 heat oil in skillet.
  • 3 onions for 2-3 minutes.
  • 4 add chicken, garlic, and mushrooms. saute until chicken is cooked almost through, about 5-6 minutes.
  • 5 add evaporated milk, pepper, salt, peas and parsley. bring to a boil. reduce heat and simmer for an additional 5 minutes.
  • 6 add pasta, stir to coat, and serve.
