Barley Corn Casserole

Total Time: 1 hr 25 mins Preparation Time: 10 mins Cook Time: 1 hr 15 mins

Ingredients

  • 1 cup chopped onion
  • 2/3 cup chopped carrot
  • 3 chopped garlic cloves
  • 1 tablespoon olive oil
  • 1 cup barley
  • 3 cups fat free chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups frozen corn, defrosted
  • 1/2 cup fresh parsley

Recipe

  • 1 sauté onion, carrot and garlic in olive oil until tender.
  • 2 place in 2 qt prepared baking dish.
  • 3 add barely, chicken broth, salt and pepper.
  • 4 cover and cook at 350 for 60 minutes.
  • 5 uncover and stir in corn and parsley.
  • 6 cover and cook for 10-15 until corn is heated through.
