Barley Corn Casserole

Ingredients
- 1 cup chopped onion
- 2/3 cup chopped carrot
- 3 chopped garlic cloves
- 1 tablespoon olive oil
- 1 cup barley
- 3 cups fat free chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups frozen corn, defrosted
- 1/2 cup fresh parsley
Recipe
- 1 sauté onion, carrot and garlic in olive oil until tender.
- 2 place in 2 qt prepared baking dish.
- 3 add barely, chicken broth, salt and pepper.
- 4 cover and cook at 350 for 60 minutes.
- 5 uncover and stir in corn and parsley.
- 6 cover and cook for 10-15 until corn is heated through.
