Cajun Chicken With Fettuccine

Ingredients

  • Servings: 4
  • 1/2 package fettuccine
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried leaf thyme
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • 1 lb chicken, stir-fry strips or 1 lb boneless skinless chicken breast, cut into strips
  • 2 tablespoons vegetable oil
  • 2 green peppers, chopped
  • 1 (19 ounce) can tomatoes, drained or 4 fresh plum tomatoes, coarsely chopped
  • 1/2 cup chopped pepperoni or 1/2 cup chorizo sausage (optional)
  • 1/2 cup sour cream

Recipe

  • 1 cook pasta in a large pot of boiling salted water until al dente, about 8 minutes.
  • 2 meanwhile, stir seasonings together and toss with chicken.
  • 3 prepare all remaining ingredients.
  • 4 heat oil in a large frying pan set over medium-high heat.
  • 5 add chicken and stir-fry until it loses its pink colour, about 4 minutes.
  • 6 add peppers, tomatoes and pepperoni, if using.
  • 7 stir often for 5 minutes.
  • 8 remove pan from heat and stir in sour cream.
  • 9 toss with cooked pasta.
