Cheesy Pasta Pots

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 9 ounces dry penne pasta
  • 1 ounce butter
  • 1 tablespoon plain flour
  • 3/4 cup milk
  • 1 1/2 cups sharp cheddar cheese, grated
  • 1/4 cup frozen peas
  • 1 small red pepper, finely diced

Recipe

  • 1 preheat oven to 350°f
  • 2 grease 6 x 3/4-cup capacity ovenproof ramekins.
  • 3 cook pasta in a large saucepan of boiling salted water until just tender. drain and return to saucepan.
  • 4 melt butter in a small saucepan over high heat. add flour and cook for 45 seconds. remove from heat and slowly add milk, stirring constantly.
  • 5 return to heat and cook, stirring, until sauce comes to the boil. reduce heat and simmer for 3 minutes.
  • 6 add 1 cup cheese and stir until well combined and melted.
  • 7 stir sauce, peas and pepper through pasta. spoon into ramekins.
  • 8 sprinkle with remaining cheese. bake for 15 to 20 minutes or until cheese is golden.
