Cheesy Pasta Pots

Ingredients
- 9 ounces dry penne pasta 
- 1 ounce butter 
- 1 tablespoon plain flour 
- 3/4 cup milk 
- 1 1/2 cups sharp cheddar cheese, grated 
- 1/4 cup frozen peas 
- 1 small red pepper, finely diced 
Recipe
- 1 preheat oven to 350°f 
- 2 grease 6 x 3/4-cup capacity ovenproof ramekins. 
- 3 cook pasta in a large saucepan of boiling salted water until just tender. drain and return to saucepan. 
- 4 melt butter in a small saucepan over high heat. add flour and cook for 45 seconds. remove from heat and slowly add milk, stirring constantly. 
- 5 return to heat and cook, stirring, until sauce comes to the boil. reduce heat and simmer for 3 minutes. 
- 6 add 1 cup cheese and stir until well combined and melted. 
- 7 stir sauce, peas and pepper through pasta. spoon into ramekins. 
- 8 sprinkle with remaining cheese. bake for 15 to 20 minutes or until cheese is golden.
