- 1/2 cup chicken broth
- 1/2 cup wine
- 1 cup half-and-half
- 1/2 cup evaporated milk
- 2 teaspoons butter, softened
- 1 tablespoon flour
- 1/2 lb crab
- 2 tablespoons parsley, chopped
- 2 tablespoons green onions, chopped
- 1/2 teaspoon salt (to taste)
- 1 tablespoon lemon juice
- 8 ounces linguine
- 1 tablespoon butter
- 2 tablespoons parmesan cheese, grated
Recipe
- 1 in a skillet combine chicken broth and wine.
- 2 boil until reduced to 1/3 cup.
- 3 remove from heat and slowley whisk in half and half and evaporated milk, stirring constantly until blended.
- 4 return to heat and simmer until the mixture is reduced to 1-1/3 cup.
- 5 meanwhile, combine 2 teaspoons softened butter and flour, slowly whisk into the milk mixture, continue stirring until the sauce is thickened and no lumps remain.
- 6 (if sauce is to thick add more half and half or milk.) add crab, chopped parsley, chopped green onion, salt and lemon juice.
- 7 reduce heat and cook until crab is heated through.
- 8 meanwhile, cook linguini according to package directions.
- 9 toss with 1 tablespoon butter and grated parmesan cheese.
- 10 pour sauce over the pasta and toss until evenly coated.

- 4 cups miniature marshmallows
- 5 cups crisp rice cereal
- 1 cup coconut

- 1 melt butter; add marshmallows, cook and stir until melted.
- 2 remove from heat.

- 250 g semolina, roasted
- 150 g fresh coconut or 150 g desiccated coconut
- 400 g soft brown sugar ( sugar works fine too)
- 4 cardamom pods (if using cardamom powder, then 1/4 teaspoon should do)
- 1/4 cup water (if using desiccated coconut, i recommend using 1/8 cup water and 1/8 cup coconut milk for better fla)
- 1/4 teaspoon vanilla essence

- 1 firstly, oil or butter a cookie sheet (or even a cutting board would do!).
- 2 ((if using cardomom pods - split the cardomom pods and remove the seeds. crush the seeds with the handle of your knife.)).
- 3 in a non-stick pan,over medium heat, dry roast the semolina until light brown in colour. keep stirring so it doesn't burn. set aside.
- 4 in another pan, mix sugar and water together and cook on medium heat until all the sugar is dissolved. (if you find the mixture getting too dry and that your sugar has not yet dissolved, add a bit more water).
- 5 add the coconut and mix well.
- 6 add roasted semolina, cardomom seeds or powder, vanilla essence and mix until well combined and the mixture is ready to set. (should be quite thick).
- 7 immediately transfer onto the greased sheet and flatten with the back of your spatula. cut into any shape you like - (diamond or square)with a butter knife.you can even use a cookie cutter if you fancy!
- 8 allow to set and cool completely. it may take about 30-40mins.
- 9 once cooled, store in an airtight container and enjoy!

- 1 preheat oven to 325*.
- 2 in large bowl, beat eggs well. mix in cheeses and parsley well. stir in macaroni.
- 3 pour mixture into a generously greased 8" x 12" pyrex baking dish. bake for 1 hour or until knife inserted in center comes out clean. let cool at least 5 minutes before serving to allow cheese sauce to thicken slightly. may need to be seasoned with pepper just before serving.

- 4 boneless skinless chicken breast halves
- 1/4 cup flour
- 3 tablespoons oil, divided
- 4 slices mozzarella cheese
- 2 cups chunky spaghetti sauce
Recipe
- 1 cook pasta according to package directions; drain.
- 2 meanwhile, place each chicken breast between wax paper and roll or pound with a rolling pin to 1/4-inch thickness; coat with flour.
- 3 heat 2 tablespoons oil in a large skillet and cook chicken over medium-high heat 3 to 4 minutes or until lightly browned on one side.
- 4 turn and cook about 3 minutes or until cooked through.
- 5 top each chicken breast with a slice of mozzarella cheese; cover skillet and cook about 1 minute or until cheese is soft.
- 6 meanwhile, heat spaghetti sauce in a small saucepan.
- 7 pour about 1/2 cup sauce on each dinner plate and top with chicken. toss pasta with remaining oil and place along side the chicken.

- 2 cups light sour cream
- 2 (4 ounce) cans diced green chilies, drained
- 1/2 cup sliced green onion (include some tender green tops)
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- fresh ground black pepper
- 2 tablespoons chopped fresh parsley
- 2 large zucchini, unpeeled, and cut into 1/4-inch slices
- 3 tomatoes, seeded, sliced, and drained
- 4 cups grated monterey jack cheese

- 1 preheat oven to 350°.
- 2 in a saucepan over high heat, bring chicken stock to a boil.
- 3 add in rice; lower heat to low and cook, covered, about 20 minutes or until liquid is absorbed; set aside.
- 4 in a bowl, mix the sour cream, chiles, onions, oregano, salt, pepper, and parsley together.
- 5 in a 4-quart casserole dish that has been coated lightly with cooking spray, add half of each of the following in layers: rice, sour cream mixture, zucchini, tomatoes, and cheese.
